Once considered a fine-dining ingredient that cost the earth, lobsters are crawling their way on to quick-service menus thanks to robust supply levels and high-tech processing plants that shorten the time from catch to fully processed.


The lobster sandwich features chunks of lobster meat from Atlantic Canada, lightly mixed with mayo, and costing $8 for a six-inch sub. Comparatively, retail price for imported lobster in South Africa ranges between R900 and R1 000 per kilo and has a 30% mortality rate.
